Easy Vegan Chili

INGREDIENTS

  • olive oil
  • 1/2 onion
  • 2 garlic cloves
  • 1 red chilli
  • 1 red bell pepper
  • 1 1/2 tsp cumin
  • 1 1/2 tsp coriander
  • 2 tsp paprika
  • 1 tsp oregano
  • 2 tsp cayenne pepper
  • 3 tbsp tomato purée
  • 1 tin chopped tomatoes
  • 1 tsp brown sugar
  • 1 tbsp @eccobella_beauty boon broth
  • 1 tin black beans
  • 1 tin kidney beans
  • 250g vegan soya minceINSTRUCTIONS:
  • Dice the onion and garlic and chop up the red bell pepper and chili.
  • Add a generous amount of olive oil to a large pan on medium heat. Allow the oil to heat up before adding the diced onion and garlic. Cook for around 3 minutes before adding the pepper and chilli. Cook for a further 3-4 minutes.
  • Add the spices and mix to combine.
  • Pour in the chopped tomatoes, tomato purée and brown sugar.
  • Combine the boon broth with 6oz of hot water. Pour into the pan and mix. Cook for 10 minutes.
  • Drain and rinse the kidney beans and black beans before adding to the pan along with the vegan soya mince.
  • Cook for a further 10 – 15 minutes.
  • Serve with some tortilla chips and some plain vegan yogurt.
