INGREDIENTS
- olive oil
- 1/2 onion
- 2 garlic cloves
- 1 red chilli
- 1 red bell pepper
- 1 1/2 tsp cumin
- 1 1/2 tsp coriander
- 2 tsp paprika
- 1 tsp oregano
- 2 tsp cayenne pepper
- 3 tbsp tomato purée
- 1 tin chopped tomatoes
- 1 tsp brown sugar
- 1 tbsp @eccobella_beauty boon broth
- 1 tin black beans
- 1 tin kidney beans
- 250g vegan soya minceINSTRUCTIONS:
- Dice the onion and garlic and chop up the red bell pepper and chili.
- Add a generous amount of olive oil to a large pan on medium heat. Allow the oil to heat up before adding the diced onion and garlic. Cook for around 3 minutes before adding the pepper and chilli. Cook for a further 3-4 minutes.
- Add the spices and mix to combine.
- Pour in the chopped tomatoes, tomato purée and brown sugar.
- Combine the boon broth with 6oz of hot water. Pour into the pan and mix. Cook for 10 minutes.
- Drain and rinse the kidney beans and black beans before adding to the pan along with the vegan soya mince.
- Cook for a further 10 – 15 minutes.
- Serve with some tortilla chips and some plain vegan yogurt.
