Dice the onion and garlic and chop up the red bell pepper and chili.
Add a generous amount of olive oil to a large pan on medium heat. Allow the oil to heat up before adding the diced onion and garlic. Cook for around 3 minutes before adding the pepper and chilli. Cook for a further 3-4 minutes.
Add the spices and mix to combine.
Pour in the chopped tomatoes, tomato purée and brown sugar.
Combine the boon broth with 6oz of hot water. Pour into the pan and mix. Cook for 10 minutes.
Drain and rinse the kidney beans and black beans before adding to the pan along with the vegan soya mince.
Cook for a further 10 – 15 minutes.
Serve with some tortilla chips and some plain vegan yogurt.
